Sage

Salvia officinalis

A Mediterranean shrub with long, wrinkled, velvety leaves of a silvery green. In early summer it sends up spikes of bluish violet flowers in separate tiers.

It is a relative of rosemary, which now shares its genus, and like it, it loves sun and dry soil. In the kitchen it has always partnered roasts and butter.

Its scent is warm and resinous, slightly camphorous with an earthy depth, like hillsides after rain.
