Rosemary

Salvia rosmarinus

An evergreen of Mediterranean scrubland, with needle-like leaves, green above and silvery beneath, and small pale blue flowers that can open almost all year round.

Its traditional Latin name, ros marinus, means “dew of the sea”, for how well it grows near the coast. Since 2017 botanists have placed it in the genus Salvia.

It smells intense and resinous, of pine and camphor, with a fresh, slightly bitter note that stays on your fingers.
