Thyme

Thymus vulgaris

A small woody shrub that covers dry, stony hillsides, with tiny grey leaves and minute pink or white flowers from spring into early summer.

Just brushing past it releases its scent: warm, dry and spicy, with a peppery edge. It is one of the smells of Mediterranean hillsides in summer and of traditional cooking.
